Easy Homemade Mayonnaise

I haven't bought mayonnaise that use seed oils and preservatives since I made this mayonnaise and realized how easy, clean and delicious it is. Obviously, without preservatives, it will not last months. I recommend using it within a few days.

This mayo is great on sandwiches, burgers, used in recipes like my spinach artichoke dip or in sauces such as homemade quesadilla sauce. 

Ingredients
  • 1 egg
  • 1 Tablespoon dijon mustard
  • 1 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1 Tablespoon red or white wine vinegar
  • 1 1/2 cup extra-virgin or avocado oil
Instructions
  1. Mayonnaise

    Mix all ingredients except oil together in a food processor or with an emulsion blender. 

    Slowly add oil as you continue to mix. (Slowly is key)

    Continue to mix until you reach your desired creamy consistency.
